Pecan Chicken Salad
Ingredients
- 2 hard boiled eggs, peeled and finely chopped
- 2 cup finely chopped cooked chicken breasts
- 3 teaspoon finely chopped fresh parsley leaves
- 1/3 cup mayonnaise (or more to taste)
- 1/2 cup sour cream
- 2 teaspoon fresh lemon juice
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped Mammoth pecans
- 1 dash salt, freshly ground black pepper, and cayenne to taste
Directions
Makes 4 servings
Finely chop Mammoth pecans and combine all of the ingredients in a mixing bowl. Cover and chill for at least two hours before serving.
