Olivia Regard's Ginger Crinkles with Smoked Pecan Sugar

Ingredients

  • 2/3 cup pecan oil
  • 1 cup sugar
  • 1 egg
  • 1/4 cup Steen's Molasses
  • 2 cups unbleached all-purpose flour
  • 1/2 teaspoon kosher salt
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • Smoked pecan sugar (or turbinado/granulated sugar for rolling)
    • Directions:

        1. Preheat oven to 350°F.
        2. Whisk pecan oil and sugar together. In a separate bowl, beat the egg and stir into the oil-sugar mixture.
        3. Stir in molasses. Sift flour, salt, baking soda, cinnamon, and ground ginger into wet ingredients. Mix until blended.
        4. Scoop dough using a 1 1/2 tbsp cookie scoop or small spoon. Roll dough into balls by hand.
        5. Coat dough balls in smoked pecan sugar and place on a parchment-lined baking sheet.
        6. Bake 15 minutes for chewy cookies or up to 17 minutes for crispier cookies.
        7. Note: Dough freezes well. Options:
            Freeze as a mass of dough in a freezer-safe bag. Thaw, scoop, roll in sugar, and bake.
              Flash freeze dough balls on a parchment-lined sheet for 15 minutes, transfer to freezer bag, roll in sugar, and bake. Increase baking time slightly if baking frozen dough.
