Ashley Roussel's Pecan Apple Crisps

Ingredients

For the Filling:

  • 5 Granny Smith apples, peeled, cored, chopped small
  • 1/4 cup finely chopped pecans
  • 3 tbsp all-purpose flour
  • 1/2 cup brown sugar
  • 8 tbsp unsalted butter, melted
  • 1 tbsp lemon juice

For the Topping:

  • 3/4 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 6 tbsp chilled butter, cut into pieces
  • 1/4 cup coarsely chopped pecans

Directions:

  1. Preheat oven to 350°F.
  2. In a large bowl, combine apples, finely chopped pecans, flour, brown sugar, melted butter, and lemon juice. Divide mixture among individual cast iron skillets or 7–8 oz ramekins.
  3. In a separate bowl, mix flour, brown sugar, cinnamon, and salt. Cut in the chilled butter until mixture forms pea-sized crumbs. Stir in coarsely chopped pecans.
  4. Sprinkle topping evenly over the apple filling.
  5. Bake for 35–40 minutes, until topping is golden brown and filling is bubbly.
  6. Cool for 10 minutes before serving. Best enjoyed with Creole Cream Cheese Ice Cream.
