Broiled Redfish with Pecans

Makes 6 servings

Ingredients

  • 6 redfish (or any firm, white-flesh fish) fillets, about 8 oz each
  • Salt, cayenne pepper, and hot sauce, to taste
  • 2 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1/2 cup finely chopped celery
  • 1 cup thinly sliced white button mushrooms
  • 1/2 cup dry white wine
  • 1/4 cup fresh lemon juice
  • 4 tbsp (1/2 stick) butter, melted
  • 1 cup pecan meal

Directions:

  1. Preheat broiler and set rack about 4 inches from the heat. Lightly oil the bottom of a baking pan with olive oil.
  2. Season fish fillets with salt, cayenne, and hot sauce. Set aside.
  3. In a bowl, toss onion, bell pepper, celery, and mushrooms with salt, cayenne, and hot sauce. Spread evenly on the bottom of the prepared pan.
  4. Place seasoned fillets on top of the vegetables. Pour over 1/4 cup wine and 2 tbsp lemon juice. Broil for 2–3 minutes.
  5. Remove from oven, drizzle with remaining wine, lemon juice, and melted butter. Sprinkle pecan meal evenly over the fillets.
  6. Return to oven and broil 6–8 minutes, or until fish flakes easily with a fork.
  7. Serve immediately with Roasted Sweet Potatoes on the side.
