Buttermilk Fudge

Ingredients

  • 2 1/2 cups sugar
  • 1 1/4 cups buttermilk
  • 4 tablespoons butter
  • 1 teaspoon baking soda
  • 2 tablespoons light corn syrup
  • 1 teaspoon pure vanilla extract
  • 2 cups chopped pecans

Directions:

  1. In a heavy saucepan over medium heat, combine the sugar, buttermilk, butter, baking soda, and corn syrup.
  2. Cook, stirring constantly, until the mixture reaches 235°F on a candy thermometer.
  3. Remove from heat and stir in the vanilla extract and pecans.
  4. Beat the mixture slightly, then pour into a buttered pan.
  5. Allow to cool and set, then cut into squares. Makes about 24–36 pieces.
