Justin Girouard's Pecan Praline Bacon

Ingredients

  • 12 strips thick-cut smoked bacon
  • 2 cups Cane River pecan pieces or chopped Mammoth pecans
  • 3 cups dark brown sugar

Directions:

  1. Preheat oven to 320°F (160°C). Line a baking sheet with aluminum foil and cover with a piece of wax paper or a silicone baking mat.
  2. Lay bacon strips 1/4 inch apart on the prepared sheet.
  3. Completely cover each strip with brown sugar, then sprinkle pecan pieces evenly over the bacon. If using Mammoth pecans, finely chop before adding.
  4. Bake slowly for 12 minutes, then rotate the tray and bake for another 10–15 minutes, until the bacon is bubbling and lightly browned. Watch carefully to avoid burning.
  5. Remove from oven and allow to cool to room temperature before handling. Be careful—bacon will be extremely hot.
