Macaroon Pie

Ingredients

  • 3 eggs, lightly beaten
  • 1 cup light corn syrup
  • 1/2 cup packed light brown sugar
  • 3 tablespoons butter, melted
  • 1/2 teaspoon pure almond extract
  • Dash of salt
  • 1 cup grated coconut
  • 1 cup finely chopped pecans
  • 1 9-inch unbaked pie shell
  • Whipped cream, for serving

Directions:

    • Preheat oven to 350°F (175°C).
    • In a large mixing bowl, combine eggs, light corn syrup, brown sugar, melted butter, almond extract, and a dash of salt. Beat by hand until well mixed.
    • Fold in the grated coconut and finely chopped pecans.
    • Pour the mixture into the unbaked pie shell.
    • Bake for 40–50 minutes, until the center is set. Remove from oven and let cool completely.
    • Serve topped with whipped cream.
