Pecan Chicken Salad

Ingredients

  • 2 hard boiled eggs, peeled and finely chopped
  • 2 cups finely chopped cooked chicken breasts
  • 3 teaspoons finely chopped fresh parsley leaves
  • 1/3 cup mayonnaise (or more to taste)
  • 1/2 cup sour cream
  • 2 teaspoons fresh lemon juice
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped Mammoth pecans
  • Dash of salt, freshly ground black pepper, and cayenne to taste

Directions:

  1. Finely chop Mammoth pecans.
  2. Combine all ingredients in a large mixing bowl.
  3. Cover and chill for at least 2 hours before serving.
