Pecan-Rice Pilaf

Servings: 4

Ingredients

  • 1 1/2 tablespoon olive oil
  • 1/2 cup finely chopped yellow onions
  • 1/4 cup chopped carrots
  • 1 cup long grain white rice
  • 1 1/2 cup chicken broth
  • Salt and black pepper, to taste
  • 1/2 cup toasted pecan pieces

Directions:

  1. Heat olive oil in a small saucepan over medium heat. Add onions and carrots, cooking about 5 minutes until softened.
  2. Add rice and chicken broth. Season with salt and pepper. Bring to a boil.
  3. Reduce heat to medium-low, cover, and simmer about 20 minutes, until rice is tender and broth is absorbed.
  4. Remove from heat and let stand 5 minutes. Stir in toasted pecan pieces and fluff with a fork.
  5. To serve: divide pilaf between 4 dinner plates, top with chicken, and garnish with green onions if desired.
