Pecan Tassies

Ingredients

For the Pastry:

  • 8 oz cream cheese, softened
  • 1 cup margarine
  • 2 cups all-purpose flour

For the Filling:

  • 3 eggs, well beaten
  • 2 cups brown sugar
  • 4 cups Cane River Pecans, chopped
  • 1 teaspoon pure vanilla extract

Directions:

  1. Preheat oven: Set to 350°F.
  2. Make the pastry: In a bowl, blend cream cheese, margarine, and flour until smooth. Divide into 6 equal portions, then divide each portion into 8. Press the dough into tart tins or mini muffin tins.
  3. Prepare the filling: In a mixing bowl, combine eggs, brown sugar, chopped Cane River Pecans, and vanilla. Mix until well blended.
  4. Assemble: Spoon filling into prepared tart shells, filling only 3/4 full.
  5. Bake: Bake for about 20 minutes, until lightly browned.
  6. Cool & store: Let tarts cool slightly before removing from tins. Once cooled, store in an airtight container or freeze for later.
