Pecan Truffles

Ingredients

  • 6 oz semi-sweet chocolate
  • 1/3 cup heavy cream
  • 3/4 cup Cane River Pecan Meal
  • 1 1/3 cups confectioners’ sugar
  • 1 tbsp orange liqueur (such as Grand Marnier or Cointreau)
  • 1/3 cup unsweetened cocoa, sifted

Directions:

  1. Melt chocolate: In a heavy saucepan over low heat, combine chocolate and cream. Stir until smooth and fully melted.
  2. Mix: Stir in Cane River Pecan Meal, confectioners’ sugar, and liqueur until blended.
  3. Chill: Transfer mixture to a bowl, cover loosely, and refrigerate until firm.
  4. Shape: Place sifted cocoa in a shallow bowl. Scoop firm chocolate mixture with a melon baller or small scoop, then roll quickly into balls.
  5. Coat: Roll truffles in cocoa to coat evenly.
  6. Store: Layer between wax paper in an airtight container. Keep refrigerated for up to 2 weeks.
