Pineapple Cake

Ingredients

  • 2 cups sugar
  • 2 eggs
  • 2 cups crushed pineapple with can syrup
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups pecan meal
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt

Coconut-Pecan Icing

  • 1/2 stick (4 tablespoons) butter
  • 1/2 cup packed light brown sugar
  • Pinch of salt
  • 1/2 cup evaporated milk
  • 2 cups confectioners' sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup grated coconut
  • 1 cup chopped pecans

Directions:

    1. Preheat oven to 325°F (163°C). Grease and flour a 10x13x2-inch baking pan.
    2. Cream the sugar and eggs in a mixing bowl until light and fluffy.
    3. Add pineapple, flour, pecan meal, baking powder, and salt. Mix to blend.
    4. Pour the batter into the prepared pan and bake for 30–35 minutes, or until a cake tester inserted in the center comes out clean.
    5. Remove from oven and cool completely before icing.

      Icing Directions:

        • In the top of a double boiler, combine butter, brown sugar, salt, and evaporated milk. Cook over medium heat, stirring constantly, until smooth.
        • Remove from heat and cool for 15 minutes.
        • Beat in confectioners’ sugar until spreading consistency is reached.
        • Stir in vanilla, coconut, and pecans.
        • Spread icing evenly over cooled cake before serving.
