Rum Balls

Ingredients

  • 3 cups vanilla wafer crumbs
  • 1 cup confectioners’ sugar, plus more for coating
  • 1 1/2 tbsp unsweetened cocoa powder
  • 3 tbsp light corn syrup
  • 1/3 cup dark rum
  • 3 tbsp bourbon or brandy
  • 1 cup Cane River Pecan Meal

Directions:

  1. Mix: Combine all ingredients in a mixing bowl and blend well.
  2. Shape: Form mixture into balls about the size of walnuts.
  3. Coat: Roll each ball gently in confectioners’ sugar.
  4. Store: Place in an airtight container. Keeps up to 1 week.
