Orange Praline Yams

Servings: 8–10

Ingredients

  • 4 lb fresh yams, peeled and quartered
  • 2/3 cup fresh orange juice
  • 5 tablespoon brandy
  • 4 tablespoon butter, melted
  • 1 tablespoon grated orange zest
  • 2 teaspoon salt
  • 1 teaspoon ground ginger
  • Dash of freshly ground black pepper
  • 3 egg yolks
  • 2/3 cup packed light brown sugar
  • 1/3 cup chopped pecans
  • 1/2 cup butter, melted
  • 1 teaspoon ground ginger (for topping)

Directions:

  1. Boil the yams in water to cover until tender, about 25–30 minutes. Drain and cool.
  2. Cut the yams into chunks and beat with an electric mixer until smooth.
  3. Add orange juice, brandy, melted butter, orange zest, salt, ginger, black pepper, egg yolks, and sugar. Beat until smooth and well blended.
  4. Transfer mixture to a buttered 7x11-inch baking dish.
  5. Preheat oven to 350°F (175°C).
  6. Make topping: Combine pecans, brown sugar, melted butter, and ginger. Mix well and spread over yam mixture.
  7. Bake until brown and bubbly, about 45 minutes. Cool for 5 minutes before serving.
