Pecan Pralines

Ingredients

  • 2 cups packed light brown sugar
  • 1 cup granulated sugar
  • 1 cup evaporated milk (or substitute 1 can sweetened condensed milk)
  • 3 tablespoons light corn syrup
  • 4 tablespoons butter
  • 1 dash salt
  • 3 cups Cane River Pecan halves
  • 2 teaspoons pure vanilla extract

Directions:

  1. In a heavy saucepan over medium heat, combine brown sugar, granulated sugar, evaporated milk, corn syrup, butter, and salt. Stir until sugar dissolves completely and the mixture begins to thicken.
  2. Add pecans and continue cooking until mixture reaches the soft-ball stage (235–238°F on a candy thermometer).
  3. Remove from heat, add vanilla, and beat vigorously until mixture begins to lose its gloss and becomes creamy.
  4. Working quickly, drop spoonfuls of the mixture onto wax paper. Allow pralines to cool and harden.
  5. Variation: Substitute 1 can condensed milk for the evaporated milk and follow the recipe as directed.
